Introduction to Food Science

This is a three-hour lecture course designed to introduce the student to food science technology. The Canadian food industry is introduced along with its regulations and food product labelling requirements. Food Science and Technology is examined through the introduction of the major and minor components of food. Students will also be introduced to the functionality of these components in food processing and the management of product quality.
