Recipe for success: Durham College Culinary Skills students to serve up fine dining options at Bistro Max

Students will prepare three-course dinner options for public as part of curriculum

OSHAWA, ONT. – To demonstrate their training and growing culinary skills, the first-ever students of Durham College’s new Culinary Skills certificate program are inviting members of the media to the official launch of Bistro Max – a student-operated restaurant/classroom – on Thursday, February 3 at Maxwell Heights Secondary School (Maxwell Heights S.S.) in Oshawa, Ont.

As part of the one-year program’s Food Service Operation course, students will open Bistro Max to the public for a 10-week period during February, March and April where they will be responsible for preparing and serving three-course meals from a biweekly, rotating menu for $15 per person.

Media are invited to observe the students from 4 to 5 p.m. as they prepare a sumptuous meal using the skills they’ve obtained in their first semester of studies. Media are then invited to stay for dinner at 5:30 p.m., which includes minted green pea soup or Caesar salad; roast pork loin, English-style fish or lasagne duet; and lemon meringue pie or a fruit plate for dessert.

The Culinary Skills program was introduced in September 2010 to provide students with basic theoretical and practical culinary skills with an emphasis on locally grown and produced foods.

While students currently use Maxwell Heights S.S. for their practical lab work, they will eventually study in the new 30,000-square-foot building to be built for students studying in hospitality, tourism and food programs as part of the college’s Whitby campus expansion. The building will be able to accommodate an additional 950 students and house a full-service, green-certified restaurant that is open to the general public and a greenhouse so both students and community members can watch the foods of Durham Region come to life.
